Ingredients

  • 1 lb chicken cubes (skinless, boneless)
  • 1 cup cottage cheese (low-fat recommended)
  • 1/3 cup grated Parmesan cheese
  • 1 tsp paprika
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp oil (olive recommended)

Instructions

  • Pat chicken cubes dry with paper towels
  • Sprinkle with paprika and pepper, tossing to coat
  • Heat oil in skillet over medium-high until shimmering
  • Add chicken and cook 6-10 minutes, turning occasionally until golden brown
  • Transfer cooked chicken to a plate
  • Reduce heat to low
  • Stir cottage cheese and Parmesan in skillet until smooth (2-4 minutes)
  • Return chicken to skillet, toss gently to coat
  • Serve immediately or let rest briefly before serving

Notes

Use low-fat cottage cheese for a lighter option
