Ingredients

  • 2½ cups cooked chicken (shredded or diced)
  • ½ cup red onion (finely chopped)
  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt
  • 2 celery stalks (chopped)
  • 1 tbsp fresh dill (plus extra minced fresh dill for garnish)
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp lemon pepper
  • ½-1 tsp salt (to taste)
  • Sliced green onions (for garnish)

Instructions

  • Combine the chicken and vegetables in a large mixing bowl and toss gently.
  • Prepare the dressing by whisking mayonnaise, Greek yogurt, lemon/lime juice, garlic powder, lemon pepper, and salt in a separate bowl.
  • Pour the dressing over the chicken mixture and mix thoroughly.
  • Fold in 1 tbsp fresh dill.
  • Adjust seasoning with additional salt if needed.
  • Garnish with minced dill and green onions before serving.

Notes

Use pre-cooked rotisserie chicken for convenience.
Store leftovers in an airtight container in the fridge for up to 3 days.
Optional additions: add grapes, apples, or dried cranberries for sweetness.
