Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 cup shredded cheddar cheese
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños (optional)
  • 4 large flour tortillas
  • ¼ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • Salt and black pepper to taste
  • Fresh shredded lettuce

Instructions

  • Cook the beef and onions: Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook for 5–7 minutes, stirring occasionally, until the beef is browned and onions are tender.
  • Season: Sprinkle with salt and black pepper to taste. Drain any excess grease, if necessary, to avoid soggy burritos.
  • Melt the cheese: Reduce the heat to medium-low. Add the shredded cheddar cheese to the beef mixture and stir continuously until the cheese has fully melted and is evenly combined with the meat.
  • Make the sauce: In a small bowl, mix together the mayonnaise, ketchup, and mustard until smooth and creamy.
  • Prep the tortillas: Warm the flour tortillas slightly, either in a microwave for about 15 seconds or on a dry skillet, so they become soft and easier to fold.
  • Assemble: Spoon an even amount of the beef and cheddar mixture onto the center of each tortilla. Top with diced tomatoes, sliced jalapeños (if using), and shredded lettuce.
  • Add sauce and fold: Drizzle the prepared sauce over the toppings. Fold in the sides of the tortilla, then roll tightly from the bottom up to form the burrito.
  • Serve: Slice each burrito in half and serve immediately for best taste and texture.

Notes

Don’t overcook the beef: Aim for just browned meat with tender onions to keep things juicy.
Warm tortillas help with folding and prevent cracking.
