Ingredients

  • 1 cup (225g) unsalted butter
  • 200g dark chocolate (70% cocoa recommended)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 teaspoon non-alcoholic vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped and patted dry
  • Optional: chocolate chips or chunks (for extra texture and richness)

Instructions

  • Melt the unsalted butter and dark chocolate together in a heatproof bowl over a simmering water bath or in the microwave in 30-second bursts. Stir until smooth. Let it cool slightly.
  • Whisk in granulated sugar and brown sugar until fully incorporated. Add eggs one at a time, whisking thoroughly after each. Stir in non-alcoholic vanilla extract.
  • In a separate bowl, sift together flour, cocoa powder, and salt. Gradually fold these into the wet mixture with a spatula, being careful not to overmix.
  • Ensure chopped strawberries are dry, then gently fold them into the batter.
  • Pour the batter into an 8x8-inch parchment-lined baking pan. Sprinkle optional chocolate chips or chunks on top. Bake at 350°F (180°C) for 30-35 minutes. Let cool before cutting into 16 squares.

Notes

For best texture, ensure strawberries are entirely dry before adding to batter. Chopping strawberries larger preserves their freshness. Store leftovers in an airtight container at room temperature for 2-3 days or refrigerate for extended freshness. A light dusting of powdered sugar is a delightful garnish.
