Ingredients

  • 2 cups pitted sweet cherries, chopped
  • 1 cup ketchup
  • 1/3 cup apple cider vinegar
  • 1/3 cup brown sugar
  • 2 tbsp Worcestershire sauce (halal/non-alcoholic)
  • 1 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp chipotle chili powder
  • 1/2 tsp kosher salt

Instructions

  • Combine chopped cherries, ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, tomato paste, smoked paprika, garlic powder, chipotle chili powder, and kosher salt in a medium saucepan.
  • Bring the mixture to a gentle simmer over medium heat. Stir occasionally to prevent sticking.
  • Continue simmering for 18 to 20 minutes until cherries are soft and the sauce thickens.
  • Use an immersion blender in the saucepan to blend until smooth, or transfer to a standard blender and puree before returning to the saucepan.
  • If desired, return to low heat and cook 2 to 3 minutes for a thicker sauce.
  • Cool completely and store in a clean jar in the refrigerator for up to 2 weeks.

Notes

Use ripe, sweet cherries for the best flavor.
Keep the heat moderate while simmering to avoid burning.
Adjust sweetness with more brown sugar if needed before blending.
