Ingredients

  • 1 lb ground beef (choose lean for less fat)
  • 1 medium onion, diced
  • 1 can (15 oz) sloppy joe sauce
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 2 cups beef broth (low sodium recommended)
  • 2 cups uncooked pasta (rotini, elbow macaroni, or your preferred shape)
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: diced pickles, ketchup, mustard

Instructions

  • Cook the Ground Beef and Onion: In a large skillet, heat a tablespoon of oil over medium heat. Add the ground beef and diced onion. Cook for about 6-8 minutes, stirring occasionally, until the beef is fully browned and the onion softens. Drain any excess grease to keep the dish from being too oily.
  • Add Sauce and Broth: Stir in the sloppy joe sauce, diced tomatoes along with their juice, and beef broth. Bring this mixture to a gentle simmer, allowing the flavors to meld.
  • Cook the Pasta: Add your uncooked pasta directly into the skillet, mixing well to coat the pasta evenly with the sauce. Cover the skillet and cook for 12-15 minutes, stirring occasionally to prevent sticking, until the pasta is tender and the sauce has thickened to a creamy, rich consistency.
  • Add Cheese: Lower the heat to a gentle simmer and stir in the shredded cheddar cheese. Keep stirring until the cheese melts fully, creating a smooth and velvety sauce that clings to every bite of pasta.
  • Season and Serve: Taste your dish and add salt and pepper as needed. Serve immediately, and if you like, top with diced pickles, ketchup, or mustard to evoke that classic cheeseburger flair.

Notes

Use lean ground beef (90% lean or higher) to reduce greasiness but keep flavor.
For richer flavor, reserve a bit of pasta water to adjust sauce consistency as needed.
Low-sodium broth reduces sodium content effectively.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
