Ingredients

  • 1 rotisserie chicken, shredded (skin removed)
  • 10 oz Nacho Cheese Doritos, crushed
  • 15 oz corn, drained
  • 10 oz Rotel tomatoes with green chilies, undrained
  • 10.5 oz cream of chicken soup
  • 1/2 packet taco seasoning (1 tbsp approx.)
  • 1 cup shredded taco blend cheese
  • 8 oz sour cream
  • 1/2 cup milk
  • 1 cup chopped broccoli (optional)

Instructions

  • Preheat oven to 350°F (175°C)
  • Prepare the filling by mixing shredded chicken, drained corn, Rotel tomatoes, cream of chicken soup, taco seasoning, shredded cheese, sour cream, milk, and optional broccoli in a bowl
  • Crush Doritos into bite-sized pieces
  • Layer crushed Doritos in a greased 9x13 inch baking dish
  • Add half the chicken mixture, then another Dorito layer sprinkled with cheese
  • Repeat with remaining chicken mixture and top with a final Dorito-cheese layer
  • Bake uncovered for 30 minutes until golden and bubbly
  • Let rest 5 minutes before serving

Notes

For extra crunch, toast crushed Doritos in the oven for 5 minutes before layering
Substitute frozen broccoli florets if fresh is unavailable
Casserole can be prepared ahead and refrigerated for up to 24 hours before baking
