Ingredients

  • 2 medium yellow squash
  • 1 cup shredded cheddar cheese
  • ½ cup cooked turkey bacon, chopped
  • ¼ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 400°F (200°C). Wash squash and slice into ¼-inch rounds. In a bowl, toss squash with olive oil, salt, pepper, and garlic powder. Arrange in a single layer on a parchment-lined baking sheet. Sprinkle cheddar cheese over each round, top with turkey bacon and Parmesan. Bake for 15–20 minutes until tender and golden-bubbly.

Notes

Use a mandoline for uniform thickness.
Sprinkle cheese under the squash rounds for a gooey center.
Substitute mozzarella for cheddar if preferred.
Let cool slightly before serving to prevent cheese from slipping.
