Ingredients

  • 1 pre-baked pie crust (9-inch)
  • 1 cup brown sugar, packed
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups milk (whole milk preferred)
  • 3 egg yolks, beaten
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Chocolate shavings or butterscotch chips (for garnish)

Instructions

  • Prepare the butterscotch filling: In a medium saucepan, whisk together brown sugar, cornstarch, and salt.
  • Add the milk: Gradually pour in milk, whisking constantly to prevent lumps.
  • Cook over medium heat: Stir continuously until thickened and bubbling (7-9 minutes).
  • Temper the eggs: Add 1/2 cup of hot filling to beaten egg yolks, whisking constantly.
  • Combine and cook further: Return egg yolk mixture to the saucepan, cook 2 minutes longer.
  • Finish the filling: Remove from heat, stir in butter and vanilla until smooth.
  • Pour into crust and chill: Pour filling into crust, cool, then refrigerate 4+ hours.
  • Prepare the whipped cream: Whip heavy cream and powdered sugar until stiff peaks form (optional).

Notes

Use a pre-baked pie crust for best results.
Chill thoroughly before serving to ensure the filling sets.
Top with whipped cream and butterscotch/chocolate shavings just before serving.
