Ingredients

  • 4 cups ripe peaches, peeled and chopped
  • 1 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey

Instructions

  • Peel the peaches by blanching in hot water for 30 seconds, then ice water.
  • Chop peaches into small pieces and lightly mash for a smoother texture.
  • In a saucepan, combine peaches, brown sugar, granulated sugar, lemon juice, vinegar, cinnamon, nutmeg, and salt.
  • Cook over medium heat for 10–15 minutes, softening the peaches and releasing juices.
  • Use an immersion blender to puree into a smooth consistency, reserving small chunks if desired.
  • Simmer gently on low for 25–35 minutes until thick and glossy.
  • Stir in butter until melted, then add optional vanilla and honey for additional flavor.
  • Spoon jam into sterilized jars, seal tightly, and store in the refrigerator.

Notes

Use a water bath for long-term canning if safe storage is required.
For vegan versions, substitute butter with coconut oil and omit vanilla/honey.
