Ingredients

  • 4 large flour tortillas
  • 8 large eggs
  • 8 oz halal turkey sausage (or 8 slices turkey bacon)
  • 4 hashbrown patties or 2 cups frozen hashbrowns
  • 1½ cups shredded sharp cheddar cheese

Instructions

  • Preheat the oven to 350°F (175°C)
  • Cook the turkey sausage in a skillet on medium heat for 6-8 minutes, or until browned and fully cooked. If using turkey bacon, cook in a skillet until crispy and drain on paper towels
  • Whisk the eggs thoroughly in a bowl. Pour into a greased skillet over medium-low heat. Cook gently, stirring frequently until soft and fluffy; remove from heat
  • Prepare the hashbrowns by cooking in a skillet according to package instructions until golden and crispy (patties: 4-5 minutes per side; loose hashbrowns: 8-10 minutes)
  • In a small bowl, add 1/4 cup shredded cheese to each tortilla
  • Layer scrambled eggs, cooked sausage (or bacon), and hashbrowns onto each tortilla
  • Top with additional cheese, fold each tortilla by thirds, and place seam-side down on a baking sheet
  • Toaster oven or oven: Toast for 5–7 minutes until the tortillas are lightly golden and crisp

Notes

For a healthier version, use whole wheat tortillas and reduced-fat cheese
Ensure the turkey bacon/sausage is fully cooked before assembling the wraps
Leftover wraps can be frozen (uncooked) for up to 1 month and baked directly from frozen, adding a few extra minutes to the baking time
