Ingredients

  • 1½ cups fresh blackberries, halved if large
  • 2 ripe but firm peaches, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) sweet corn, drained
  • 1 red bell pepper, diced
  • ½ red onion, finely diced
  • 1-2 jalapeños, finely diced
  • ⅓ cup fresh cilantro, chopped
  • ½ cup shredded cheddar cheese
  • ½ cup cooked halal turkey bacon bits
  • Juice of 1 lime
  • ⅓ cup BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons hot honey
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • Salt and black pepper, to taste

Instructions

  • Make the dressing: In a medium bowl, whisk together the BBQ sauce, apple cider vinegar, hot honey, lime juice, olive oil, chili powder, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper until smooth and well combined.
  • Combine base ingredients: In a large mixing bowl, add the drained black beans, sweet corn, diced red bell pepper, finely diced red onion, finely diced jalapeños, and chopped cilantro. Stir gently to distribute evenly.
  • Add the diced peaches and blackberries to the vegetable and bean mixture, then gently fold together to avoid mashing the fruits.
  • Pour the prepared dressing over the mixture and toss until everything is well combined.
  • Stir in the shredded cheddar cheese and halal turkey bacon bits, if using.
  • Transfer the mixture to a serving bowl and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.

Notes

For extra heat, increase the amount of jalapeños or cayenne pepper.
Add a splash of hot sauce to the dressing if you prefer a spicier kick.
This caviar can be made a day ahead, stored in the refrigerator, and brought to room temperature before serving.
For an extra crunch, serve with tortilla chips or pita bread.
