Ingredients

  • 2 lbs lean ground beef
  • 1 cup chopped yellow onion
  • 1¼ cups Thousand Island dressing
  • ¾ cup chopped dill pickles
  • 3 tbsp mayonnaise
  • 2 tbsp ketchup
  • 2 tsp yellow mustard
  • 2 tsp onion powder
  • 1½ tsp smoked paprika
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 cups shredded mild cheddar cheese
  • 32 oz frozen tater tots
  • 1½ cups shredded lettuce
  • 2 tsp sesame seeds (optional)

Instructions

  • Preheat oven to 425°F (220°C). Grease a 9x13-inch baking dish.
  • Brown ground beef and onion in a skillet until no longer pink. Drain excess oil.
  • Mix in 1 cup Thousand Island dressing, pickles, mayonnaise, ketchup, mustard, onion powder, smoked paprika, salt, and pepper. Stir well.
  • Spread meat mixture in the baking dish. Sprinkle with cheddar cheese.
  • Arrange tater tots in a single layer over the cheese.
  • Bake for 25–30 minutes until tater tots are golden.
  • Let rest 5 minutes. Top with lettuce and remaining Thousand Island dressing.
  • Sprinkle sesame seeds optional.

Notes

Use nonstick spray for baking dish to reduce oil.
Double recipe for large families. Freeze unbaked casserole for later use.
Cheddar can be substituted with Gouda or mild mozzarella for different flavor profiles.
