Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • Additional granulated sugar, for rolling

Instructions

  • Preheat oven to 375°F (190°C). Prepare an ungreased baking sheet.
  • Cream butter, peanut butter, granulated sugar, brown sugar, egg, and vanilla until smooth.
  • Whisk flour, baking soda, and salt in a separate bowl.
  • Gradually combine dry ingredients into wet mixture until dough forms.
  • Roll dough into 1-inch balls and coat with granulated sugar.
  • Arrange on baking sheet with 2-inch spacing.
  • Press each cookie with a fork to create a criss-cross pattern.
  • Bake for 10–12 minutes until edges are golden but centers remain soft.
  • Cool on baking sheet before transferring to a wire rack.
