Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar, plus extra for rolling
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1/2 teaspoon alcohol-free vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  • Preheat oven to 375°F (190°C) and prepare an ungreased baking sheet with parchment paper.
  • Cream butter, peanut butter, granulated sugar, brown sugar, egg, and alcohol-free vanilla extract until smooth.
  • Whisk flour, baking soda, and salt in a separate bowl.
  • Gradually mix dry ingredients into the wet mixture until combined.
  • Form dough into 1-inch balls and roll in additional granulated sugar.
  • Place balls 2 inches apart on the baking sheet.
  • Press a criss-cross pattern with a fork.
  • Bake for 10-12 minutes until edges are lightly golden.
  • Let cool completely before serving.

Notes

Substitute alcohol-free vanilla extract for traditional extract.
Roll cookies in sugar for extra crunch.
