Ingredients

  • 1 cup Krusteaz Buttermilk Protein Pancake Mix
  • 2/3 cup milk (dairy or plant-based)
  • 1 large egg
  • 1 cup fresh berries, rinsed and diced (blueberries, strawberries, raspberries, or mixed)
  • Powdered sugar, for dusting
  • Jam or syrup, warmed, for topping or dipping

Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a mini muffin pan with cooking spray or a thin layer of oil.
  • In a medium-sized bowl, whisk together 1 cup of Krusteaz Buttermilk Protein Pancake Mix, 2/3 cup of milk, and 1 egg until combined.
  • Spoon about 1 heaping tablespoon of batter into each mini muffin well, filling them evenly.
  • Top each filled well with 3-4 fresh diced berries. Gently press the berries into the batter so they don’t fall out during baking.
  • Bake in the preheated oven for 12-14 minutes, or until the pancake bites turn a light golden brown on top.
  • Allow the bites to cool in the pan for 5 minutes.
  • Carefully remove each bite from the pan, then sprinkle generously with powdered sugar for a touch of sweetness.
  • Serve warm with sides of jam or syrup for dipping.
