Ingredients

  • Cherry tomatoes, halved
  • Mozzarella pearls
  • Fresh basil leaves, torn
  • Olive oil
  • Balsamic glaze
  • Salt
  • Black pepper

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
  • Arrange trimmed asparagus in a single layer on the sheet
  • Drizzle olive oil evenly over asparagus and season with salt and black pepper
  • Scatter halved cherry tomatoes and mozzarella pearls over asparagus
  • Bake for 12-15 minutes until asparagus is tender and slightly caramelized
  • Remove from oven and drizzle with balsamic glaze

Notes

Cherry tomatoes can be substituted with grape tomatoes
Fresh mozzarella can be torn into small pieces if pearls aren't available
For non-alcoholic balsamic glaze, use a certified halal reduction
