Ingredients

  • 2 large avocados, diced
  • 1 English cucumber, sliced or diced
  • 1 pint grape or cherry tomatoes, halved
  • ½ medium red onion, diced
  • 2 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • ¼ cup fresh cilantro, chopped
  • ¾ tsp salt
  • ⅛ tsp black pepper

Instructions

  • Wash all fresh produce thoroughly
  • Dice avocados, cucumber, and red onion into bite-sized pieces
  • Halve cherry tomatoes
  • Chop cilantro
  • Combine avocados, cucumber, tomatoes, and red onion in a large bowl
  • Add cilantro to the bowl
  • Pour橄榄油 and lemon juice over the salad
  • Sprinkle with salt and black pepper
  • Gently toss ingredients to coat without mashing avocados
  • Serve immediately
