Ingredients

  • 2 boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • ½ yellow onion
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Olive oil
  • Tortillas
  • Sour cream
  • Guacamole
  • Fresh cilantro (optional)

Instructions

  • Combine chicken, sliced peppers, and onion in a bowl
  • Drizzle with olive oil and toss to coat
  • Mix chili powder, paprika, cumin, onion powder, garlic powder, salt, and pepper as seasoning
  • Add seasoning to chicken-veg mixture and toss until coated
  • Preheat air fryer to 350°F for 3 minutes
  • Cook in a single layer for 16-20 minutes, tossing halfway
  • Serve with tortillas, sour cream, guacamole, and cilantro

Notes

Use parchment paper in air fryer basket for easy cleaning
Adjust cooking time if basket is overwhelmed
Add extra oil in final minutes if drier texture is desired
