Ingredients

  • 4 boneless skinless chicken breasts (1 to 1 1/2 pounds total, 3/4 to 1 inch thick)
  • 1 (6-ounce) box stuffing mix (any flavor)
  • 1 (10.5-ounce) can condensed cream of mushroom soup
  • 1 cup low-sodium chicken broth

Instructions

  • Spray slow cooker with nonstick spray.
  • Place chicken breasts in single layer in cooker.
  • Whisk soup and broth until smooth.
  • Pour half the mixture over chicken.
  • Sprinkle stuffing mix evenly over chicken.
  • Pour remaining soup mixture over stuffing, pressing gently to moisten.
  • Cover and cook on LOW 5-6 hours or HIGH 2.5-3 hours.
  • Season with salt and pepper before serving.

Notes

Uses halal chicken; substitute with tofu/beyond meat for vegetarian version.
Stuffing can be replaced with 3 cups cooked white rice.
