Ingredients

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large orange bell pepper, cut into 1-inch pieces
  • 1 red onion, peeled and cut into 1-inch pieces
  • 1 medium zucchini, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon kosher salt
  • Pinch of black pepper
  • 1 package (12 oz) robust Italian chicken sausage, sliced into 3/4 inch rounds

Instructions

  • Chop the red bell pepper, orange bell pepper, red onion, and zucchini into 1-inch pieces and place them into a large mixing bowl.
  • Drizzle the vegetables with 1 tablespoon of avocado oil and toss well to coat.
  • In a small bowl, combine garlic powder, onion powder, Italian seasoning, kosher salt, and black pepper.
  • Sprinkle the spice blend over the vegetables and toss until evenly coated.
  • Add sliced chicken sausage to the bowl of vegetables and toss to distribute spices.
  • Preheat air fryer to 390°F (200°C) and spray the basket with cooking spray.
  • Arrange the sausage and vegetable mixture in an even layer in the basket; cook in batches if needed.
  • Cook for 10 minutes, flipping halfway through for even browning.
