Bean Soup is an easy and inexpensive dish and one of our all-time favorite foods to come home to on a chilly day.
Ingredients:

1 lb dried navy beans (organic)

1 smoked ham hock (premium)

1 large sweet onion, chopped

2 organic carrots, peeled/chopped

2 celery stalks, chopped

2 cloves garlic, minced

6 cups bone broth (chicken/vegetable)

1 bay leaf
-
1 tsp dried thyme

Salt & pepper to taste

Fresh parsley (garnish)
Instructions :

Soak Beans:
Rinse navy beans → soak overnight in glass bowl. Drain. -
Sauté Base:
In Dutch oven, sauté onion, carrots, celery 5 mins. Add garlic → cook 1 min. -
Simmer Magic:
Add ham hock, beans, broth, bay leaf, thyme.
Simmer covered 2-2.5 hrs in soup pot until tender. -
Finish:
Remove hock → shred meat → return to pot. Discard bay leaf. -
Serve:
Garnish with parsley → pair with crusty bread.
