Ingredients:
- 1 (3.4 oz) package instant pistachio pudding mix
- 1 (20 oz) can crushed pineapple (not drained)
- 2 cups mini marshmallows
- 1 (8 oz) container whipped topping (like Cool Whip), thawed
- ½ cup chopped pecans or walnuts
- Optional: maraschino cherries for garnish
Instructions:
- In a large bowl, combine the pistachio pudding mix and the entire can of crushed pineapple (including juice). Stir until well blended.
- Fold in the whipped topping until smooth and creamy.
- Add the mini marshmallows and chopped nuts, and gently mix to combine.
- Cover and chill for at least 1 hour (or overnight) before serving.
- Garnish with cherries or a sprinkle of nuts before serving if desired.
