Watergate Salad

Ingredients:

  • 1 (3.4 oz) package instant pistachio pudding mix
  • 1 (20 oz) can crushed pineapple (not drained)
  • 2 cups mini marshmallows
  • 1 (8 oz) container whipped topping (like Cool Whip), thawed
  • ½ cup chopped pecans or walnuts
  • Optional: maraschino cherries for garnish

Instructions:

  1. In a large bowl, combine the pistachio pudding mix and the entire can of crushed pineapple (including juice). Stir until well blended.
  2. Fold in the whipped topping until smooth and creamy.
  3. Add the mini marshmallows and chopped nuts, and gently mix to combine.
  4. Cover and chill for at least 1 hour (or overnight) before serving.
  5. Garnish with cherries or a sprinkle of nuts before serving if desired.
