Ingredients:
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 2 cups crushed corn chips (Doritos or Fritos)
- 1 1/2 cups shredded cheddar or Mexican-blend cheese
- 1 cup corn
- 1 can black beans, drained and rinsed
- 1/2 cup salsa
- 1/4 cup sour cream
- 2 tablespoons chopped green onions (optional)
- 1/4 cup sliced black olives (optional)
Instructions:
1. Preheat Oven
Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Cook the Beef
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add taco seasoning and water, then simmer for 3–5 minutes until thickened.
3. Mix Filling
Stir in corn, black beans, and salsa. Cook for another 2–3 minutes until heated through.
4. Assemble the Casserole
Spread half of the crushed corn chips in the bottom of the baking dish.
Add the beef mixture evenly over the chips.
Sprinkle 1 cup of cheese on top.
Add the remaining chips, then top with the rest of the cheese.
5. Bake
Bake for 20–25 minutes, or until the cheese is melted and bubbly.
6. Add Toppings and Serve
Remove from the oven and let cool slightly.
Top with sour cream, green onions, and olives if desired. Serve warm.
