Vegetable Omelet Muffins for Kids Recipe

INGREDIENTS:

  • pasture-raised eggs

  • 1 small sweet onion, finely chopped

  • mild green chili, finely chopped (optional)

  • 1 small organic carrot, finely chopped

  • ½ cup sweetcorn

  • Optional: bell peppersbroccoli floretscherry tomatoes

  • 2 tbsp fresh cilantro (or parsley/chives)

  • ½ cup shredded mozzarella

  • Salt & pepper to taste

INSTRUCTIONS:

  1. Prep:
    Preheat oven to 350°F (175°C). Grease muffin tin with non-stick spray or line with silicone liners.

  2. Mix Base:
    Beat eggs in large mixing bowl until smooth.

  3. Add Veggies:
    Stir in onionchili (if using), carrotsweetcorn, and optional veggies.

  4. Season & Cheese:
    Season with salt/pepper → fold in mozzarella and cilantro.

  5. Bake:
    Fill muffin cups ¾ full → bake 15-20 mins until golden.
    Cool 5 mins → remove with mini spatula.
