INGREDIENTS:

6 pasture-raised eggs

1 small sweet onion, finely chopped

1 mild green chili, finely chopped (optional)

1 small organic carrot, finely chopped

½ cup sweetcorn
-
Optional: bell peppers, broccoli florets, cherry tomatoes

2 tbsp fresh cilantro (or parsley/chives)

½ cup shredded mozzarella
-
Salt & pepper to taste
INSTRUCTIONS:

Prep:
Preheat oven to 350°F (175°C). Grease muffin tin with non-stick spray or line with silicone liners. -
Mix Base:
Beat eggs in large mixing bowl until smooth. -
Add Veggies:
Stir in onion, chili (if using), carrot, sweetcorn, and optional veggies. -
Season & Cheese:
Season with salt/pepper → fold in mozzarella and cilantro. -
Bake:
Fill muffin cups ¾ full → bake 15-20 mins until golden.
Cool 5 mins → remove with mini spatula.
