Vanilla Magic Custard Cake

Ingredients:

  • 4 eggs, separated (room temperature)
  • ¾ cup caster sugar
  • 125 g butter, melted
  • 1 tsp vanilla extract
  • ¾ cup plain flour, sifted
  • 2 cups lukewarm milk
  • ¼ cup icing sugar, for dusting

Instructions:

  1. Preheat oven to 340°F (170°C). Line an 8-inch square pan.
  2. Whip egg whites to stiff peaks; set aside.
  3. Beat egg yolks with sugar until pale and fluffy.
  4. Mix in melted butter and vanilla, then add flour.
  5. Slowly pour in milk and mix until smooth.
  6. Gently fold in egg whites; batter will be thin and slightly lumpy.
  7. Bake 35–60 minutes until the top is lightly golden and set.
  8. Cool completely, dust with icing sugar, slice, and serve.
