Instructions:
- Preheat the oven to 375°F (190°C). Grease a mini muffin or mini bite pan and set aside.
- In a medium bowl, whisk together the flour, sugar, cinnamon, and baking powder.
- In a separate bowl, whisk the melted butter, egg, milk, and vanilla extract until smooth.
- Add the wet ingredients to the dry ingredients and gently mix until just combined. Do not overmix.
- Spoon the batter into the prepared pan, filling each cavity about two-thirds full.
- Bake for 10–12 minutes, or until lightly golden and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool in the pan for a few minutes.
- Combine the sugar and cinnamon for the topping and lightly dust over the warm bites before serving.
