Ultimate Lemon Chickpea Patties with Yogurt Sauce

Ingredients:

  • Chickpea Patties
  • 2 cups cooked chickpeas (or 1 can, drained and rinsed)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup breadcrumbs (or oat flour)
  • 1 egg
  • 2 tbsp fresh parsley or cilantro, chopped
  • Olive oil, for frying
  • Yogurt Sauce
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 small garlic clove, finely grated
  • Salt to taste
  • Fresh parsley or dill, chopped

Instructions:

  1. In a food processor, pulse chickpeas until roughly mashed (not smooth).
  2. Transfer to a bowl and mix with onion, garlic, lemon zest, lemon juice, cumin, paprika, salt, pepper, breadcrumbs, egg, and herbs.
  3. Form the mixture into small patties.
  4. Heat olive oil in a skillet over medium heat. Pan-fry patties 3–4 minutes per side until golden and crispy.
  5. In a small bowl, mix all yogurt sauce ingredients until smooth.
  6. Serve warm chickpea patties with yogurt sauce on the side.
