Ingredients:
- Chickpea Patties
- 2 cups cooked chickpeas (or 1 can, drained and rinsed)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- Zest of 1 lemon
- 2 tbsp lemon juice
- 1 tsp ground cumin
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- ½ cup breadcrumbs (or oat flour)
- 1 egg
- 2 tbsp fresh parsley or cilantro, chopped
- Olive oil, for frying
- Yogurt Sauce
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 small garlic clove, finely grated
- Salt to taste
- Fresh parsley or dill, chopped
Instructions:
- In a food processor, pulse chickpeas until roughly mashed (not smooth).
- Transfer to a bowl and mix with onion, garlic, lemon zest, lemon juice, cumin, paprika, salt, pepper, breadcrumbs, egg, and herbs.
- Form the mixture into small patties.
- Heat olive oil in a skillet over medium heat. Pan-fry patties 3–4 minutes per side until golden and crispy.
- In a small bowl, mix all yogurt sauce ingredients until smooth.
- Serve warm chickpea patties with yogurt sauce on the side.
