Ingredients:
- 6 slices center-cut bacon
- 3 lb russet potatoes
- 3/4 cup sour cream
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 2 teaspoons seasoned salt
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Colby-Jack cheese
Instructions:
1. Cook the Bacon
Cook the bacon in a skillet over medium heat until crispy. Transfer to paper towels to drain, then crumble and set aside.
2. Bake the Potatoes
Preheat the oven to 400°F (200°C). Scrub the potatoes and prick them with a fork. Place them on a baking sheet and bake for about 50–60 minutes until tender.
3. Prepare the Potatoes
Allow the potatoes to cool slightly, then peel the skins if desired. Place the potato flesh in a large bowl.
4. Mash the Mixture
Add sour cream, heavy cream, butter, seasoned salt, garlic powder, and black pepper. Mash until smooth and creamy.
5. Add Bacon and Cheese
Stir in most of the crumbled bacon, 1 cup of cheddar cheese, and 1 cup of Colby-Jack cheese. Mix well.
6. Assemble the Casserole
Spread the potato mixture evenly into a greased baking dish. Sprinkle the remaining cheddar and Colby-Jack cheese on top along with the remaining bacon.
7. Bake Again
Bake at 375°F (190°C) for 20–25 minutes until hot and the cheese is melted and bubbly.
