Turkey, Spinach, and Swiss Mini Quiche

 

Ingredients:

  • 7 large eggs
  • 2 tablespoons sour cream
  • 2 tablespoons heavy cream
  • 2 tablespoons butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dry mustard
  • 1 cup finely chopped fresh baby spinach
  • 1 cup finely chopped deli-style turkey
  • 1 cup shredded Swiss cheese
  • 1 tablespoon dried thyme
  • Sour cream, for serving (optional)
  • Salsa, for serving (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). In a bowl, beat the eggs, sour cream, heavy cream, and melted butter until smooth.
  2. Add salt, pepper, garlic powder, onion powder, and dry mustard. Mix until well combined.
  3. Spray a mini muffin pan with nonstick spray. Divide the turkey, spinach, and most of the cheese evenly among the cups, reserving about 1/8 cup cheese.
  4. Pour the egg mixture evenly over each cup. Sprinkle with the remaining cheese and dried thyme.
  5. Bake for about 12 minutes, or until the eggs are set. Broil briefly if desired to lightly brown the tops.
  6. Serve warm with sour cream and salsa, if desired.
