Ingredients:
- 7 large eggs
- 2 tablespoons sour cream
- 2 tablespoons heavy cream
- 2 tablespoons butter, melted
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dry mustard
- 1 cup finely chopped fresh baby spinach
- 1 cup finely chopped deli-style turkey
- 1 cup shredded Swiss cheese
- 1 tablespoon dried thyme
- Sour cream, for serving (optional)
- Salsa, for serving (optional)
Instructions:
- Preheat oven to 350°F (175°C). In a bowl, beat the eggs, sour cream, heavy cream, and melted butter until smooth.
- Add salt, pepper, garlic powder, onion powder, and dry mustard. Mix until well combined.
- Spray a mini muffin pan with nonstick spray. Divide the turkey, spinach, and most of the cheese evenly among the cups, reserving about 1/8 cup cheese.
- Pour the egg mixture evenly over each cup. Sprinkle with the remaining cheese and dried thyme.
- Bake for about 12 minutes, or until the eggs are set. Broil briefly if desired to lightly brown the tops.
- Serve warm with sour cream and salsa, if desired.
