Ingredients:
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 3/4 cup powdered sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
Instructions:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter, peanut butter, powdered sugar, and brown sugar until smooth and fluffy.
- Beat in the egg and vanilla until fully combined.
- Add the flour and salt, mixing just until a thick, soft dough forms. Do not overmix.
- Scoop about 2 1/2 tablespoons of dough per cookie, roll into balls, and place on the baking sheet. Do not flatten.
- Bake for 10–12 minutes, until edges are set but centers are still soft.
- Let cookies cool on the baking sheet before transferring to a wire rack.
