3 cups all-purpose flour (e.g., King Arthur)

3 tbsp granulated sugar

½ tsp sea salt

4 tsp baking powder

½ tsp cream of tartar (optional lift)

¾ cup cold European-style butter (cut into cubes)

1 large pasture-raised egg

1 cup whole milk or cultured buttermilk
Instructions :

Prep:
Preheat oven to 425°F (220°C). Line baking sheet with parchment paper. -
Dry Mix:
Whisk flour, sugar, salt, baking powder, and cream of tartar in large mixing bowl. -
Cut Butter:
Add cold butter cubes → cut in with pastry cutter until pea-sized crumbs form. -
Wet Mix:
Beat egg + milk/buttermilk → gently stir into flour mix just until combined. -
Shape:
Turn onto floured surface → knead 4-5 times → pat to 1″ thickness.
Cut with biscuit cutter → place on sheet touching for soft sides. -
Bake:
12-15 mins until golden → serve warm with honey or jam.
