Ingredients:
- For the Cranberries
- 2 cups fresh or frozen cranberries
- 1/4 cup maple syrup
- Zest and juice of 1 orange
- 1/4 tsp ground nutmeg
- For the Whipped Feta
- 225 g (8 oz) feta cheese in brine, drained
- 1/2 cup plain Greek yogurt
- 1/4 tsp chili flakes
- 2 tbsp olive oil
- Toppings
- 1/4 cup chopped pistachios
- 1–2 tbsp honey (for drizzling)
- Fresh thyme (optional)
Instructions:
- Add cranberries, maple syrup, orange zest, orange juice, and nutmeg to a saucepan. Bring to a boil, then reduce to a simmer and cook 6–10 minutes until cranberries burst and thicken. Set aside to cool.
- Add feta, Greek yogurt, chili flakes, and olive oil to a food processor. Blend until smooth and creamy.
- Spread whipped feta into a serving bowl. Top with cooled cranberry compote, pistachios, a drizzle of honey, and fresh thyme if using. Serve immediately or chill until ready to serve.
