Ingredients:
1 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1/2 cup vegetable oil
1 cup buttermilk
1 teaspoon vanilla extract
1/2 cup hot water or hot coffee (for extra flavor)
For Decorating (Turkey Toppers):
Chocolate frosting
Candy corn (for feathers)
Candy eyes
Mini peanut butter cups or chocolate drops (for faces)
Orange or red icing (for beak and wattle)
Instructions:
- Preheat oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- Add eggs, oil, buttermilk, and vanilla. Mix until smooth.
- Gradually stir in hot water or coffee until the batter is thin and well combined.
- Fill cupcake liners two-thirds full and bake for 18–20 minutes, or until a toothpick inserted comes out clean.
- Let cupcakes cool completely before decorating.
- Spread chocolate frosting over each cupcake.
- Arrange candy corn around the top edge for “feathers.”
- Use a mini peanut butter cup for the turkey’s face and add candy eyes, an orange icing beak, and a small red wattle.
