Taco Lasagna

Ingredients:

  • Flour tortillas
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup pico de gallo
  • 1 cup heavy cream
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons butter
  • 1 teaspoon Cajun seasoning

Instructions:

  1. Preheat the oven
    Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the beef
    In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
    Stir in taco seasoning and a splash of water according to package directions. Simmer for 2–3 minutes.
  3. Prepare the cream layer
    In a small saucepan, melt the butter over medium heat.
    Stir in heavy cream and Cajun seasoning. Simmer gently for 2–3 minutes until slightly thickened.
  4. Layer the lasagna
    • Spread a thin layer of cream sauce in the baking dish.
    • Add a layer of flour tortillas.
    • Top with seasoned beef, pico de gallo, shredded cheese, and a drizzle of cream sauce.
    • Repeat layers, ending with tortillas, cream sauce, and a generous layer of cheese on top.
  5. Bake
    Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.
  6. Rest and serve
    Let rest for 5–10 minutes before slicing and serving.

  • Top with sour cream, avocado, or fresh cilantro
  • Serve with Mexican rice or a side salad
  • Add jalapeños for extra heat
