Strawberry Rhubarb Pie Filling

Ingredients :

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp ground cinnamon (optional)

Instructions : 

  1. Combine strawberries, rhubarb, sugar, cornstarch, lemon juice, and cinnamon in a large bowl. Toss gently to coat evenly.
  2. Pour the mixture into a prepared pie crust or baking dish.
  3. Bake: Preheat oven to 375°F (190°C). Bake for 45-50 minutes or until the filling is bubbly and the fruit is tender.
  4. Cool: Allow to cool completely before serving or using in pie.
