Ingredients:
- 1 box white cake mix (plus the water, oil, and eggs it calls for)
- 1 cup fresh strawberries, chopped
- 1 package (8 oz) cream cheese, softened
- ½ cup unsalted butter, melted
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- ½ cup coconut flakes
- ½ cup white chocolate chips
Instructions:
1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
2. Prepare the cake mix according to package directions. Gently fold in the chopped strawberries, then pour the batter into the prepared baking dish.
3. In a medium bowl, beat together the softened cream cheese, melted butter, powdered sugar, and vanilla extract until smooth and creamy.
4. Drop spoonfuls of the cream cheese mixture over the cake batter—do not stir.
5. Sprinkle the coconut flakes and white chocolate chips evenly over the top.
6. Bake for 40–45 minutes, or until the edges are golden and the center is just set. The cake will have a cracked, “earthquake” look.
7. Let cool slightly before serving.
Serving Tip:
Serve warm or at room temperature. Delicious on its own or topped with a scoop of vanilla ice cream.
