Strawberry Earthquake Cake

Ingredients:

  • 1 box yellow cake mix (plus ingredients listed on the package, usually eggs, oil, and water)
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/2 cup sweetened shredded coconut (optional)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup unsalted butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Prepare the yellow cake mix according to the package instructions and pour the batter into the greased pan.
  3. Sprinkle the sliced strawberries evenly over the batter. Add coconut and nuts if using.
  4. In a bowl, beat together the softened cream cheese and granulated sugar until smooth. Drop spoonfuls of this mixture evenly over the cake batter.
  5. Drizzle the melted butter across the top.
  6. Bake for 40–45 minutes, or until the edges are golden and the center is set (the cake will have a cracked, “earthquake” look).
  7. While the cake cools slightly, whisk together powdered sugar, vanilla extract, and 2–3 tablespoons of milk to make a glaze.
  8. Drizzle the glaze over the warm cake. Let cool before slicing.
