Ingredients:
- 2 pounds lean ground beef
- 1 small onion, finely diced
- 1 box (6 oz) Stove Top stuffing mix
- 1 cup water
- 2 large eggs
- 1/2 cup milk
- 1/4 cup ketchup
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Optional Topping:
- 1/3 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon mustard
Instructions:
- Preheat Oven:
Preheat oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet. - Prepare Stuffing:
In a bowl, combine the stuffing mix with 1 cup hot water. Let it sit for 5 minutes to soften. - Mix Ingredients:
In a large bowl, combine ground beef, diced onion, softened stuffing, eggs, milk, ketchup, garlic powder, and black pepper. Mix gently until just combined. - Shape the Meatloaf:
Transfer the mixture to the prepared pan and shape into a loaf. - Add Topping (Optional):
In a small bowl, mix ketchup, brown sugar, and mustard. Spread evenly over the top of the meatloaf. - Bake:
Bake for 50–60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C). - Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
- Do not overmix to keep the meatloaf tender.
- You can substitute ground turkey for a lighter version.
- Leftovers store well in the refrigerator for up to 3 days.
