Spaghetti with Garlic and Spinach

Ingredients:

  • 8 oz spaghetti
  • 2 tablespoons olive oil
  • 4 garlic cloves, thinly sliced
  • 6 cups fresh spinach

Directions:

1. Cook the spaghetti
Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain.

2. Sauté the garlic
Heat olive oil in a large skillet over medium heat. Add the sliced garlic and cook for about 1 minute until fragrant, being careful not to burn it.

3. Add the spinach
Add the fresh spinach to the skillet and cook until wilted, about 2 to 3 minutes.

4. Combine with pasta
Add the cooked spaghetti to the skillet. Toss everything together, adding a little reserved pasta water if needed to loosen the sauce.

5. Season and serve
Season with salt and black pepper to taste. Serve warm.

Optional Add-Ins

  • Grated Parmesan cheese
  • Red pepper flakes for heat
  • A squeeze of lemon juice for freshness
