Ingredients:
- 2 3/4 cups all-purpose flour
- 2 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, room temperature
- 1 1/2 cups sugar (plus 3 tbsp for rolling)
- 2 large eggs
- 1 1/2 tsp vanilla extract
- 1 tbsp ground cinnamon
Instructions:
- Preheat oven to 400°F and line a baking sheet with parchment or a silicone mat.
- In a bowl, whisk flour, cream of tartar, baking soda, and salt.
- In a mixer, cream butter and 1 1/2 cups sugar until light and fluffy (2–3 minutes).
- Add eggs one at a time, then mix in vanilla.
- Add dry ingredients and mix until combined.
- In a small bowl, combine remaining 3 tbsp sugar with cinnamon.
- Roll 1-tbsp portions of dough into balls, then coat in cinnamon sugar.
- Place on baking sheet, spacing 2 inches apart.
- Bake 6–8 minutes.
- Cool on the pan for 2–3 minutes, then transfer to a rack.
