Snickerdoodle Cookies

Ingredients:

  • 2 3/4 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups sugar (plus 3 tbsp for rolling)
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 tbsp ground cinnamon

Instructions:

  1. Preheat oven to 400°F and line a baking sheet with parchment or a silicone mat.
  2. In a bowl, whisk flour, cream of tartar, baking soda, and salt.
  3. In a mixer, cream butter and 1 1/2 cups sugar until light and fluffy (2–3 minutes).
  4. Add eggs one at a time, then mix in vanilla.
  5. Add dry ingredients and mix until combined.
  6. In a small bowl, combine remaining 3 tbsp sugar with cinnamon.
  7. Roll 1-tbsp portions of dough into balls, then coat in cinnamon sugar.
  8. Place on baking sheet, spacing 2 inches apart.
  9. Bake 6–8 minutes.
  10. Cool on the pan for 2–3 minutes, then transfer to a rack.
