Ingredients :
- Meatloaf Cupcakes:
- 1½ lbs ground beef (85/15)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 egg
- ½ cup milk
- ½ cup smoky bourbon BBQ sauce
- 1 tsp salt
- ½ tsp black pepper
- Mashed Potato Frosting:
- 2 cups mashed potatoes (buttery and smooth)
- 2 tbsp butter
- ¼ cup milk
- Salt and pepper to taste
Instructions :
1. Preheat oven to 375°F (190°C). Grease a muffin tin.
2. In a bowl, mix all meatloaf cupcake ingredients until just combined.
3. Divide mixture into muffin cups and bake for 20–25 minutes.
4. While baking, prepare mashed potatoes and place into a piping bag.
5. Once meatloaf cupcakes are cooked, top with swirls of mashed potatoes.
6. Broil for 2–3 minutes to lightly brown the tops. Serve warm.
