Smoked Sausage Cajun Alfredo

Ingredients:

  • 12 oz fettuccine pasta
  • 14 oz smoked sausage, sliced into rounds
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Cook the Pasta
Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

2. Brown the Sausage
Heat olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook for 4–5 minutes, until browned and slightly crispy on the edges. Remove and set aside.

3. Sauté the Garlic
In the same skillet, add butter and minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.

4. Make the Alfredo Sauce
Pour in the heavy cream and milk. Bring to a gentle simmer. Stir in Parmesan cheese, Cajun seasoning, and paprika. Cook for 3–5 minutes, stirring frequently, until the sauce thickens.

5. Combine Everything
Return the sausage to the skillet. Add the cooked pasta and toss to coat evenly in the sauce. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached. Season with salt and black pepper to taste.

6. Serve
Garnish with chopped parsley if desired. Serve warm with garlic bread or a fresh green salad.

Serving Tips

  • Add sautéed bell peppers or spinach for extra color and nutrition.
  • For extra heat, increase the Cajun seasoning or add a pinch of crushed red pepper flakes.
  • Substitute shrimp for half of the sausage for a seafood twist.
