Skinny Meatloaf

This delicious Skinny Meatloaf recipe is a great way to enjoy classic comfort food without all of the calories and fat. The result is a hearty and healthy meal that the whole family will love.

Ingredients :

  • Glaze:

    • ¼ cup ketchup

    • 1 tbsp. yellow mustard

    • 2 tsp brown sugar

    Meatloaf:

    • 1 lb. ground beef tenderloin or 96% lean ground beef

    • 1 ½ slices whole wheat bread (crusts removed, shredded)

    • 1 cup chopped onion

    • 3 large egg whites

    • Pinch of salt

    • ½ tsp black pepper

    • 3 tbsp. ketchup

    • 1 tbsp. yellow mustard

    • 1 tbsp. Worcestershire sauce

    Instructions:

    1. Prep: Preheat oven to 350°F (175°C). Lightly coat a loaf pan with nonstick spray.

    2. Mix base: In a large bowl, combine ground beef, shredded whole wheat bread, chopped onionegg whitessalt, and pepper.

    3. Make sauce: In a small bowl, whisk together 3 tbsp. ketchup, 1 tbsp. mustard, and Worcestershire sauce.

    4. Combine: Pour sauce over meat mixture. Gently mix with hands until just combined.

    5. Shape & bake: Transfer mixture to the loaf pan, shaping into a loaf. Bake for 55 minutes, or until fully cooked (internal temp 160°F/71°C).

    6. Glaze (optional): While baking, mix glaze ingredients (¼ cup ketchup, 1 tbsp. mustardbrown sugar). Spread over meatloaf during the last 10 minutes of baking.

    7. Rest & serve: Let cool 10 minutes before slicing into 5 pieces.
