Glaze:

¼ cup ketchup

1 tbsp. yellow mustard

2 tsp brown sugar
Meatloaf:

1 lb. ground beef tenderloin or 96% lean ground beef

1 ½ slices whole wheat bread (crusts removed, shredded)

1 cup chopped onion
-
3 large egg whites
-
Pinch of salt
-
½ tsp black pepper
-
3 tbsp. ketchup
-
1 tbsp. yellow mustard

1 tbsp. Worcestershire sauce
Instructions:

Prep: Preheat oven to 350°F (175°C). Lightly coat a loaf pan with nonstick spray.

Mix base: In a large bowl, combine ground beef, shredded whole wheat bread, chopped onion, egg whites, salt, and pepper.

Make sauce: In a small bowl, whisk together 3 tbsp. ketchup, 1 tbsp. mustard, and Worcestershire sauce.

Combine: Pour sauce over meat mixture. Gently mix with hands until just combined.

Shape & bake: Transfer mixture to the loaf pan, shaping into a loaf. Bake for 55 minutes, or until fully cooked (internal temp 160°F/71°C).

Glaze (optional): While baking, mix glaze ingredients (¼ cup ketchup, 1 tbsp. mustard, brown sugar). Spread over meatloaf during the last 10 minutes of baking.
