Sizzling Scallops with Zesty Lime Cilantro Sauce

Ingredients:

  • 1 lb sea scallops, patted dry
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • Juice and zest of 1 lime
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions:

  1. Pat scallops completely dry and season both sides with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat until hot and sizzling.
  3. Add scallops in a single layer (do not overcrowd). Sear for 1½–2 minutes per side, until golden and slightly crisp. Remove from pan and set aside.
  4. In the same skillet, add minced garlic and sauté for 30 seconds. Stir in lime juice, zest, and chopped cilantro.
  5. Return scallops to the pan, tossing gently to coat with the sauce.
  6. Serve immediately with extra lime wedges and a drizzle of sauce from the pan.

Tip: Perfect with jasmine rice or roasted vegetables!
