Simple Cabbage Soup

Ingredients :

Fresh Veggies:

  • 1 head green cabbage, chopped

  • carrots, diced

  • celery stalks, diced

  • 1 large yellow onion, chopped

  • bell pepper (any color), diced

  • 3 cloves garlic, minced

Liquid & Seasonings:

  • 4 cups vegetable broth

  • 1 can (14.5 oz) diced tomatoes

  • 2 tbsp extra virgin olive oil

  • 2 tsp dried basil

  • 1 tsp dried oregano

  • Salt + pepper to taste

Optional Boosts:

  • 1 cup chopped kale

  • ½ tsp red pepper flakes

  • 2 tbsp nutritional yeast (cheesy flavor)

Instructions:

  1. Sauté Aromatics:

    • Heat olive oil in Dutch oven over medium heat.

    • Add oniongarliccarrotscelery, and bell pepper. Sauté 5 mins until softened.

  2. Build Soup:

    • Stir in cabbage; cook 5 mins until slightly wilted.

    • Add diced tomatoesbrothbasil, and oregano. Bring to boil.

  3. Simmer:

    • Reduce heat to low. Cover and simmer 30 mins until veggies are tender.

    • Season with salt, pepper, and optional red pepper flakes.
