Ingredients :
Fresh Veggies:

1 head green cabbage, chopped

2 carrots, diced

2 celery stalks, diced

1 large yellow onion, chopped

1 bell pepper (any color), diced

3 cloves garlic, minced
Liquid & Seasonings:

4 cups vegetable broth
-
1 can (14.5 oz) diced tomatoes
-
2 tbsp extra virgin olive oil
-
2 tsp dried basil
-
1 tsp dried oregano
-
Salt + pepper to taste
Optional Boosts:
-
1 cup chopped kale
-
½ tsp red pepper flakes
-
2 tbsp nutritional yeast (cheesy flavor)
Instructions:

Sauté Aromatics:

Heat olive oil in Dutch oven over medium heat.

Add onion, garlic, carrots, celery, and bell pepper. Sauté 5 mins until softened.

Build Soup:

Stir in cabbage; cook 5 mins until slightly wilted.

Add diced tomatoes, broth, basil, and oregano. Bring to boil.

Simmer:
-
Reduce heat to low. Cover and simmer 30 mins until veggies are tender.

Season with salt, pepper, and optional red pepper flakes.

This looks to be a FABULOUS recipe that would be hearty and soul warming at any time but ESPECIALLY in the winter months I do believe. I have made similar cabbage “stews” myself in the past and rest assured I’ll use this recipe in my next pot I make. I also like to add either one (1#) pound of cooked, lean, hamburger or a breakfast sausage (also cooked before adding) of any flavor. You can add a little extra “heat” by using a “spicy” version of your favorite sausage from the store.
OMG! I just may have to make myself a HUGE pot of this TODAY!! I’ll have a BUNCH of leftovers when I’m done, too. This, along with a slice or two of homemade sourdough bread or sliced hunks of French Bread 🥖 with a little butter is just SCREAMING my name right now!! LOL 👍🏻
