- 1 ripe avocado, sliced
- 1 cup cooked ground meat (beef, chicken, or turkey)
- ½ cup cottage cheese
For the hot honey drizzle:
- 2 tbsp honey
- ½ tsp red chili flakes (adjust to taste)
- Pinch of smoked paprika (optional)
Directions:
- Roast the sweet potato:
Preheat your oven to 400°F (200°C). Toss the sweet potato cubes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through, until tender and slightly crispy on the edges. - Prepare the meat:
While the sweet potatoes roast, cook your ground meat in a skillet over medium heat. Season with salt, pepper, and any other spices you like (garlic powder or cumin are great additions). Cook until browned and fully done, then set aside. - Make the hot honey drizzle:
In a small saucepan or microwave-safe bowl, combine the honey, chili flakes, and smoked paprika. Warm gently just until it thins out and the flavors infuse—about 15–30 seconds in the microwave or on low heat. Stir and let sit. - Assemble the bowl:
Divide the roasted sweet potatoes between two bowls. Top with a scoop of cooked ground meat, a few slices of avocado, and a generous spoonful of cottage cheese. - Drizzle & finish:
Spoon the warm hot honey over the bowl just before serving. It adds a spicy-sweet kick that ties everything together beautifully!
