Ingredients :
- 2 medium zucchini or yellow squash (or one of each), sliced into ¼-inch rounds
- 1 tablespoon olive oil
- ½ teaspoon black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic salt (or regular salt if preferred)
- ½ cup shredded cheddar or mozzarella cheese (or a mix!)
Directions:
- Preheat your oven to 425°F (220°C). Line a baking sheet with foil and drizzle or brush olive oil over the foil to prevent sticking.
- Arrange the zucchini and/or squash slices in a single layer on the prepared baking sheet.
- Sprinkle the slices evenly with black pepper, onion powder, and garlic salt. Adjust to your taste!
- Top each slice with a little pinch of shredded cheese—just enough to melt and form a golden, crispy layer.
- Bake for 12–15 minutes, or until the cheese is melted and golden brown. For extra crispiness, switch to broil during the last 1–2 minutes—but keep a close eye on it to avoid burning!
- Let cool for a minute or two, then serve warm as a snack, side dish, or appetizer.
