Ingredients:
- 2 lb beef sirloin
- 1 lb baby potatoes
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp rosemary
Instructions:
- Preheat oven to 400°F (200°C).
- Mix garlic, olive oil, salt, pepper, thyme, and rosemary.
- Rub mixture all over the beef sirloin.
- Place beef in a roasting pan and arrange potatoes around it.
- Roast for about 1 hour, or until internal temperature reaches 135°F (57°C) for medium-rare.
- Rest beef for 10 minutes, then slice and serve with the roasted potatoes.
