Ingredients :
For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Filling:
- 3 cups fresh rhubarb, chopped
- 1 cup sweetened condensed milk
- 1/2 cup brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
For the Topping:
- 1/2 cup sliced almonds
- 1/4 cup shredded coconut (optional)
- Powdered sugar, for dusting
Directions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish and line with parchment paper for easy removal.
- Make the Crust: In a medium bowl, mix flour, granulated sugar, and melted butter until a crumbly dough forms.
- Press this mixture evenly into the bottom of the prepared baking dish.
- Bake the Crust: Bake for 10-12 minutes or until lightly golden. Remove and let it cool slightly.
- Prepare the Filling: In a large bowl, combine chopped rhubarb, sweetened condensed milk, brown sugar, vanilla extract, and cinnamon. Stir until the rhubarb is fully coated.
- Assemble the Bars: Pour the rhubarb filling over the pre-baked crust, spreading it evenly. Sprinkle sliced almonds and shredded coconut (if using) on top.
- Bake Again: Bake for an additional 25-30 minutes, or until the edges are golden and the filling is set.
- Cool and Serve: Allow the bars to cool completely. Dust with powdered sugar before slicing into squares.
