Rhubarb Magic Bars

Ingredients :

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 3 cups fresh rhubarb, chopped
  • 1 cup sweetened condensed milk
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

For the Topping:

  • 1/2 cup sliced almonds
  • 1/4 cup shredded coconut (optional)
  • Powdered sugar, for dusting

Directions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish and line with parchment paper for easy removal.
  2. Make the Crust: In a medium bowl, mix flour, granulated sugar, and melted butter until a crumbly dough forms.
  3. Press this mixture evenly into the bottom of the prepared baking dish.
  4. Bake the Crust: Bake for 10-12 minutes or until lightly golden. Remove and let it cool slightly.
  5. Prepare the Filling: In a large bowl, combine chopped rhubarb, sweetened condensed milk, brown sugar, vanilla extract, and cinnamon. Stir until the rhubarb is fully coated.
  6. Assemble the Bars: Pour the rhubarb filling over the pre-baked crust, spreading it evenly. Sprinkle sliced almonds and shredded coconut (if using) on top.
  7. Bake Again: Bake for an additional 25-30 minutes, or until the edges are golden and the filling is set.
  8. Cool and Serve: Allow the bars to cool completely. Dust with powdered sugar before slicing into squares.
